Admittedly, it’s been a while since we’ve done a “Techniques” episode on “Cocktail College.” Summer seemed to simultaneously last an age and then — just like that — it was gone. So, if you’ll be so kind as to forgive that slight pause in our technique-driven programming, we promise you that we are more than making up for it today.
While “Techniques” episodes often focus on processes and drinks that require expensive equipment and esoteric ingredients, today we’re returning to the fundamentals of bartending to answer a seemingly simple question: How do you build faster rounds and, in turn, put out better drinks? After all, it doesn’t matter how many different clarifications and carbonations you have on your menu if you can’t get those creations out to guests in a timely manner.
Joining us today is Haley Traub, general manager of Attaboy and Good Guy’s in New York’s Lower East Side, who is here to school us on all things speed. Not only did Haley cover this very topic for VinePair’s “Techniques” column, but she proved she could walk the walk back in 2018 when she won the national championship of Speed Rack: America’s preeminent speed bartending competition.
