Ingredients:
- eggs – 2
- flour (any type you prefer – we suggest spelt or oat flour) – 30g
- maple syrup or another sweetener of your choice (e.g., erythritol) – 1 teaspoon
- Moya Matcha Traditional – 3g
- A handful of fresh spinach
- A small amount of butter for frying
For the topping:
- greek yogurt – 100g
- maple syrup – 15ml
- Moya Matcha Traditional – 2g
For garnish:
- Fresh fruit and nuts (seasonal fruits recommended)
Instructions:
Separate the egg whites from the yolk and whip the whites into a fluffy foam. Blend the yolks with flour, spinach, sweetener and matcha. Gently mix this blend into the whipped egg whites.
Warm a small amount of butter in a frying pan. Pour the green mixture into the pan and cover it. Cook for around 3-4 minutes over medium heat, keeping an eye on it to prevent burning. Once the bottom is nicely browned, flip the omelet over for a few more seconds.
Combine Greek yogurt with maple syrup and matcha. Spread this over your fluffy omelet and garnish with your favorite fruits and nuts.
