Grant Collins and Gin Lane Sydney have opened a new Martini and Espresso Martini Bar on Kensington Street called Dry Martini. They’re bringing back vintage recipes from the roaring 20s and 30s and putting a creative spin on espresso martinis. Imagine a ‘Salted caramel espresso with a nitro frozen foam’ or a ‘Scottish espresso with shortbread-infused whiskey and shortbread foam’. And if you can’t pick just one, you’re in luck—they’ve got an espresso martini tree, a tower with all six versions for you to try.

Taking a bit of inspiration from London’s top martini bars, with a laid-back Spanish vibe, Grant Collins from Gin Lane has put together a mix of experimental and classic drinks.

Expect waist-coated bartenders mixing up tailor-made martinis right at your table, using top-notch house-distilled gin, unique vodkas, and house-made bitters.
They’re also serving up “Neo” or fresh fruit martinis, hand-muddled with real seasonal fruit and garnished with edible fruit ‘paint’. You’ll also find a seasonally rotating “freezer” martini on the menu.

The food is designed to go perfectly with your drinks, like the ‘Oyster shell gin martini’ paired with freshly shucked oysters and a smoky dry ice presentation.
For those who love San Sebastian’s pintxos, you’ll find ‘Truffle & jamon toasties’ topped with caviar, perfect with a negroni or sidecar. Other snacks like ‘Jamon croquettes with green olive’ and ‘Anchovies & grilled zucchini’ are also on offer, packed with flavour to go with the extensive martini menu.

Dry Martini’s even looking out for your wallet with $10 mini martinis and $15 daily cocktail specials during Happy Hour every day from 5:30 PM to 7:00 PM, Tuesday through Thursday, and 5:30 PM to 6:30 PM on Fridays and Saturdays.
