Grapefruit, lemon zest, green apple, strawberry husk, buttery pastry, sweaty spice, steel wool, parmesan rind, briny salt and just unwrapped nougat. Lees ageing brings forth the autolytic savoury and yeasty depth. Plenty of layers unfurl through a creamy mid palate. Chalky texture with sharp, striking acid attack and lingering briny finish. Neat and enjoyable.
