Why Birria Quesadilla is Our Favorite
Birria Quesadillas are the perfect combination of melting cheese and juicy meat soaked up in a saucy stew. The flavors are just exquisite!
If we consider the health aspect, Birria Quesadillas are a great way to get your daily dose of protein. The savory stew-infused tortilla is chock-full of protein.
Plus, making them is quite simple and doesn’t require too many ingredients. All you need is to have your Birria Tacos made and a few basic components to create a delicious treat with your friends and family begging you to make them again and again! So, if you have a crowd to feed, this recipe is for you.
Ingredients for Birria Quesadillas
Birria Meat: The star of the show here is the meat. You can make it with beef as we did in this Birria Tacos tutorial, or you can make it with lamb as we did with the Lamb Birria. Either as delicious!!!
Birria Stew: The hidden star of the show is the Birria stew. This savory stew is made by cooking the meats as linked above in the tutorials. It’s basically beef, chilis, garlic, tomatoes, onions, al slow cooked with various spices. The best part about this stew is that it’s extremely easy to make and can be stored in the refrigerator for up to a week.
Cheese: The second step is to choose your cheese of choice. We recommend a combination of Oaxaca and mozzarella for an extra cheesy experience. Monetary jack and cotija are also great options if you want to switch it up.
Tortilla: While you can use any type of tortilla, we love a flour tortilla for the flavor. It is also important to note that the tortilla should be room temperature before assembling your quesadillas.
Toppings: Cilantro, onion, and lime are the classic Birria t toppings to top your quesadillas with. You can also alternate with other ingredients such as avocado, sour cream, lettuce, and jalapenos.
How to Make Birria Quesadillas
Once the meat and stew are ready, you’re good to go! Also note that leftovers make awesome Birria Pizza and Birria Ramen!
Follow the steps below to finish up your Birria Quesadillas:
- Add some oil and then place the tortilla onto the pan
- Slather it with Birria stew
- Flip the tortilla so you can do the same on the other side too to flavor the tortilla to the max!
- Spread a generous layer of cheese onto the tortilla
- Now load up the Birria meat over the cheese, and a spoonful of sauce (be generous with the meat!)
- Add another layer of cheese (optional–I didn’t need to, but a few of us did prefer the extra cheese!)
- Fold the tortilla and press well to seal.
- Flip for a nice golden color on both sides!
- Cut the quesadilla into wedges
- Top it off with your favorite toppings

Ingredients
- 1 Birria Tacos Recipe and Consommé class=”wprm-recipe-ingredient” style=”list-style-type: disc;” data-uid=”1″>4 tortillas large size
- 1 1/2 cups shredded cheese your favorite
- 1 onion diced
- 2 Jalapeños sliced
- 1/4 cup cilantro minced
Instructions

Have your Birria meat and Consommé prepared

Start by heating the tortillas in a cast iron or heavy skillet with a tablespoon of oil .

Brush the tortilla with the Consommé

Flip the tortilla and brush again. Then add in the cheese to cover half the tortilla.

Now on top of the cheese, add in the meat and sauce.

fold over the half of the tortilla that doesn’t have the cheese or meat on it to make a half moon shape.

Press down the tortilla with a spatula to melt the cheese and make the shape stick.

Flip the tortilla to cook on the other side for a beautiful golden sear.

Remove from the heat and repeat with the remaining tortillas to make birria quesadillas.

Cut each into half and top with the onions, jalapenos and cilantro.
