El Encanto

Juan Saldarriaga, a young farmer, took over his family’s farms in 2012, including El Encanto, one of his two farms and a favorite spot for his dad. They love escaping there to enjoy the peace and stunning scenery. El Encanto is really well-maintained and even features a variety garden, showcasing a wide array of coffee plants.

Juan’s been experimenting with different coffee varieties since taking over, planting everything from unique Castillos, Caturras, and Tabis to Bourbon, Geisha, and SL28s. He’s figuring out how each type fares in the local environment and plans to ramp up production of the most successful ones in the future.

He’s made big changes too, like building various drying facilities and altering the processing methods. He also manages a few nearby farms. We’re really impressed with how his improved drying techniques have enhanced his coffee quality. He dries washed coffees in the shade and uses a special mechanical “cold dryer” for naturals.

El Encanto, located between 1380 and 1800 meters above sea level in Bolivar, Antioquia, spans about 26 hectares. The farm mainly grows Variedad Colombia and Castillo, with decent amounts of Tabi and smaller quantities of SL 28, Maragogipe, Geisha, Bourbon, Caturra Chiroso, and Castillo Tambo. The farm uses a traditional disc pulper with a separator and fermentation tanks. For drying, they’ve got 200 square meters of moveable shelves for sun and shade drying, and for other drying experiments, they use their other farm, La Claudina, which has covered beds, a traditional parabolic dryer, and a unique mechanical “cold” dryer.
