This Low Carb recipe has only 5 ingredients, but it’s FULL of flavor!

Ingredients for Low Carb Mexican Chicken Casserole

  • Chicken, shredded – You could use a rotisserie chicken for this or buy pre-shredded chicken. Of course, you could roast a chicken, too!
  • Cream cheese – Be sure you set it out ahead of time to soften before using it in this recipe. It makes it much easier to combine with the other ingredients.
  • Salsa
  • Shredded Mexican cheese – Or you could use Cheddar cheese, if you have that on hand.
  • Taco seasoning – You can use any brand you like, but I always use this taco seasoning brand.

Instructions for Keto Mexican Chicken Casserole

Preheat your oven to 400. Grease a 9 x 13 baking dish. First, combine the chicken, salsa, cream cheese, only half of the shredded cheese. Mix well. Spoon it into the prepared casserole dish and spread it evenly.

Top with the remaining cheese and sprinkle on the taco seasoning.

  • 3 cups chicken, shredded
  • 8 oz cream cheese softened
  • 16 oz salsa
  • 8 oz shredded Mexican cheese
  • 1 tsp taco seasoning

Instructions

    1. Preheat oven to 400. Grease a 9 x 13 baking dish.
    2. Combine the chicken, cream cheese, salsa, half the shredded cheese, and taco seasoning. You may use more or less depending on how spicy you like your recipes. Mix well.
    3. Put in the prepared casserole dish. Top with the remaining cheese.
    4. Bake for 20 min or until hot and bubbly. If desired, serve on a bed of lettuce or in a low carb tortilla.
